Jeon-eo is a small, oily fish prized in late summer for a nutty, rich taste rather than a mild white-flesh profile. Bones are fine and numerous — one reason whole grilled fish and carefully cut hoe are the usual forms. In Korean seasonal cooking, peak jeon-eo is a short window worth planning around, not a year-round default.

How It’s Served
Jeon-eo gui (전어구이, grilled)
Often the first order. Whole fish over charcoal or a hot plate; eat with lettuce, ssamjang, or salt. Skin and fat carry most of the flavor.
Jeon-eo hoe (전어회)
Raw slices — the Korean hoe style of serving fresh fish (similar in idea to sashimi, but ordered and eaten in a Korean seafood-house context). Sesame oil, salt, chili, and green onion are common. Best when the kitchen is turning fish the same day.
Jeon-eo muchim (전어무침)
Seasoned, often spicy-sweet, with sesame and vegetables. A sharing plate that sits well next to rice and other seafood.

At Palpo and around Samcheonpo, festival weeks push all three onto stalls and restaurant boards. Outside the event, seafood houses still run jeon-eo while the season holds.
